SOY SAUCE PICKLED GARLIC
This recipe is so simple that you wonder why you haven't done this all your life. Our staff member Lisa Schmidt makes this every year, and you can bet that there aren't any vampires lurking around their house!
Ingredients:
- 1 cup of peeled garlic cloves (about 6-7 bulbs) larger cloves can be cut in half.
- 1 cup soy sauce (you can use temari sauce if you want it to be gluten free)
- 1/2 cup white vinegar
- 3/4 cup white sugar (or sweetener of choice)
1. Place the soy sauce, vinegar, and sugar in a sauce pan and bring to a boil, while gently stirring.
2. Remove from heat and let cool.
3. Fill a jar with the peeled garlic cloves and then add the liquid once it has cooled.
4. Place the jar in the fridge. Let this sit for 2 weeks before eating.
This garlic is fantastic with rice dishes like poke or sushi! Want to make it spicy? Add a few peppers to the jar!
