Fried Green Tomatoes

This is a basic fried green tomatoes recipe that you can easily customize with your own preferred seasonings. These work best with fully green tomatoes. Slightly red tomatoes will just get mushy.

Ingredients:
3-4 large green tomatoes (in 1/4 inch slices)
1 cup flour (use cornstarch or corn flower for gluten free)
2 eggs
1/2 cup milk or buttermilk
1/2 cup cornmeal
1/2 cup panko or bread crumbs (use more cornmeal for gluten free)
salt and pepper
Oil for frying

Prepare three bowls for dredging the tomatoes.
1. First bowl contains the flour/cornstarch
2. Second bowl contains the eggs and the milk, whisked together
3. Third bowl contains the cornmeal and panko/bread crumbs. Season with salt, pepper, and any other spices you like.
4. Dip the tomato slices in the flour, then in the egg/milk, and finally in the cornmeal/crumbs. Place the coated tomatoes on a wire rack or on sheet of parchment until all of the tomatoes are done.
5. Heat oil in a skillet or dutch oven to 375F. Fry the tomatoes until they are golden brown on both sides. Drain on paper towels and sprinkle a little more salt on the tomatoes.

Serve immediately. They are delicious on their own or with a sauce of your choice. We like a remoulade sauce.

(You can also use an air fryer: heat the air fryer to 400F, place tomatoes in the basket, spray with oil, cook for 5 minutes, turn over, spray again, and cook for 3-5 more until brown.)
